A Healthy Food Restaurant is seeking to hire a Nutritionist (Administration) who will be responsible for providing administrative and nutritional support to the restaurant’s food and nutrition operations. The role involves coordinating nutrition-related activities, supporting menu planning and review, maintaining nutrition and food service records, monitoring food quality and hygiene standards, coordinating with kitchen and administrative teams, and ensuring that nutrition-related processes are effectively documented and implemented.
The role will also support management with nutrition-related reports, procurement requirements, staff coordination, customer dietary requests, and continuous improvement of food service operations.
JOB PURPOSE
The purpose of this role is to ensure the effective administrative coordination of nutrition and food service activities while maintaining appropriate nutritional, quality, hygiene, and operational standards.
KEY RESPONSIBILITIES
A. Nutrition Administration
- Coordinate and administer day-to-day nutrition-related activities.
- Maintain accurate records of menus, recipes, ingredients, nutritional information, and dietary requirements.
- Prepare nutrition-related reports, schedules, summaries, and management updates.
- Maintain an organised filing system for nutrition and food service documentation.
- Monitor the implementation of approved nutrition policies, procedures, and guidelines.
- Coordinate nutrition-related meetings, activities, and programmes as required.
B. Menu and Meal Planning
- Assist in the preparation, review, and updating of menus.
- Ensure menus provide a balanced variety of meals appropriate for the target customer group.
- Review menu items and recipes from a nutritional perspective.
- Coordinate with chefs and kitchen staff to ensure approved menus are properly implemented.
- Maintain records of approved recipes, ingredients, portion sizes, and menu specifications.
- Recommend improvements to menus based on customer feedback, nutritional considerations, and operational requirements.
C. Procurement and Inventory Support
- Work with the Administration and Procurement Teams to identify nutrition-related food requirements.
- Assist in preparing food and ingredient specifications for procurement.
- Review the quality and suitability of food products received where required.
- Monitor food stocks and report shortages, wastage, or quality concerns.
- Support proper documentation of food purchases, usage, and inventory.
- Make recommendations on suitable and nutritious food alternatives where necessary.
D. Food Quality, Hygiene and Safety
- Support the implementation of appropriate food hygiene and safety standards.
- Monitor food handling, preparation, storage, and serving practices.
- Conduct routine checks and report identified food quality or hygiene concerns.
- Support the kitchen team in maintaining appropriate sanitation standards.
- Assist with monitoring food wastage and identifying opportunities for improvement.
- Ensure nutrition and food service records are maintained accurately and consistently.
E. Dietary Requirements and Customer Support
- Receive and coordinate information relating to customers’ dietary requirements.
- Assist in identifying appropriate meal options for customers with specific dietary preferences or restrictions.
- Maintain appropriate records of dietary requests and approved meal alternatives.
- Liaise with the kitchen and relevant departments to ensure dietary requests are properly communicated and implemented.
- Escalate complex dietary or medical nutrition requirements to the appropriate qualified professional where necessary.
F. Staff Coordination and Training
- Assist in coordinating nutrition-related training and awareness sessions for kitchen and support staff.
- Educate staff on basic nutrition, healthy food choices, food hygiene, and appropriate handling of dietary requests.
- Develop simple nutrition-related guidelines and reference materials for staff.
- Monitor adherence to established nutrition and food service procedures.
G. Reporting and Compliance
- Prepare periodic reports on nutrition and food service activities.
- Track key nutrition and food service indicators, including menu compliance, food wastage, customer dietary requests, and quality issues.
- Ensure relevant documentation is complete, accurate, and up to date.
- Support internal audits and inspections relating to food and nutrition services.
- Keep abreast of relevant nutrition, food safety, and administrative requirements.
- Ensure all activities are conducted in accordance with organisational policies and applicable regulatory requirements.
H. Administrative Support
- Provide general administrative support to the Food and Nutrition function.
- Coordinate communication between the Nutrition, Kitchen, Administration, Procurement, and Management Teams.
- Schedule meetings, inspections, menu reviews, and other nutrition-related activities.
- Prepare correspondence, reports, presentations, and other administrative documents.
- Perform other duties reasonably assigned by management.
5. QUALIFICATIONS AND EXPERIENCE
- Bachelor’s degree in Nutrition, Human Nutrition, Nutrition and Dietetics, or a related field from a recognised institution.
- Professional registration or membership with the relevant professional body in Ghana, where applicable.
- Minimum of 2 years’ relevant experience in nutrition, food service, hospitality, healthcare, catering, administration, or a related environment.
- Experience in food service administration or hospitality operations will be an advantage.
- Knowledge of food safety, menu planning, nutrition assessment, and food quality standards.
- Good knowledge of nutrition and food service principles.
- Ability to work collaboratively with kitchen, procurement, administration, and management teams.
